Ingredients
For Filling:
1 8oz block cream cheese
¾ cup sweetener (Truvia or Lakanto)
½ tsp xanthan gum
½ cup heavy whipping cream
3/8 cup key lime juice
2 tsp gelatin
green food coloring, optional
Process
- Mix gelatin in lime juice, set aside
- Combine all of the remaining ingredients in a mixer, and mix on medium-high speed until smooth
- Add in the lime juice/gelatin, mix well 1 minute
- Pour into Nutola crust, and refrigerate at least 2 hours.
